It was really nice to be the person assigned to jamming it into potatoes if you were having a bad day. We also had pie markers for differing numbers of slices that we would use before cutting pies. If I'm baking something else, I'll microwave the potato to cook it partway, and then throw it into the oven to finish cooking through and crisp up a little in however long it takes the other thing to cook. Like a lot of people who are still a bit shaken from the Great Freeze, we have a generator in the yard if things get dire. I do miss living in a state with good infrastructure. It's so much fun to be like "And we'll get hot chocolate and make peanut brittle and put up snowmen and wear the cozy coats and pick out silly winter scarves and---" when you know that your house will still be warm and lit when you come back. <br />And you've nothing to apologize for! I wasn't involved in baking them, I just put them in a bowl and jammed a spikey hunk of metal in the top to cut the cross shape in them after they were baked. I have to admit that I'm a little hesitant about the time and temp - I usually bake my potatoes at 350 for around an hour - but I usually have little Yukon Golds, not the big russet ones. I can't deny that these look delightfully fluffy.<br /><br />I hope you're staying safe down there - I'm happy that I've escaped this year's winter storms, after last year's utter misery, but I feel bad for everyone stuck with bad infrastructure and cold weather.
