Happy Mother's Day to all who celebrate! We are honoring Mom with a lovely graham cracker cake. Specifically, this barely-legible one:
Okay, obviously I didn't make the cake this year, otherwise how would I post it so early in the day? But on a previous Mother's Day, I brought over a graham cracker cake made from my great-grandmother's recipe. It's hard to argue with a really good cake with a neat story behind it.
This year, I decided not to do cake layers because we didn't have many people coming over to eat it. But I do think the lemon filling is a crucial part of making this cake truly special. So this year, we can be thankful for mothers and for working freezers!
It almost looks like an art gallery installation, doesn't it?

I did have to ice the cake quickly lest the lemon layer thaw out before I had it covered-- but our blessedly working freezer made it easy.
As proof of how good the cake is, here is how little remained after one afternoon.Not also the lemon filling, oozing tantalizingly out from under the icing that sits perfectly on top!
So, Happy Mother's Day! If I'm being honest, this year's homemade present will have to wait until the next time I visit (but the phone call's happening today, of course!). And...

I wonder if the kid who wrote that card flushed a lot of inappropriate things when he was little. Perhaps he had a sibling that did. Having lived in a basement apartment in a building with a little kid who liked to flush toys, having a john that always flushed would be an amazing gift. At one point I had one towel that was reserved for showers only while the others slowly died from all the bleach. All the basement people knew what unit that kid was in (not a basement unit) and we all celebrated when that family moved.
ReplyDeleteAmazing job clearing out so much room in your freezer. I was expecting the cake to be cut in half and stacked for the filling, but freezing and frosting over the filling was a great idea. That way you get a higher filling to cake ratio.
Yeah, a working bathroom is like a working refrigerator. You don't appreciate it until it stops. I wouldn't be surprised if the plumbing was a longstanding problem in that kid's house.
DeleteAnd the freezer space was very difficult to pull off! Especially since we don't let it run low since the pandemic shortages. I deliberately put off grocery shopping just to make it happen.
Very impressed that you got a space in the freezer for the cake! And to keep it level, no less! That step by itself would turn this into a two-day project for me.
